Easy Clams Casino Recipe

Ingredients

  • 1 pound fresh clams, scrubbed and debearded
  • 1 pound small red potatoes, scrubbed and quartered
  • 1/2 cup chopped bacon
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh oregano
  • 1/4 cup dry white wine
  • 1/4 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the clams, potatoes, bacon, onion, green bell pepper, parsley, basil, oregano, white wine, chicken broth, olive oil, salt, and pepper. Stir to coat.
  3. Pour the mixture into a 9×13 inch baking dish.
  4. Cover the dish with foil and bake for 30 minutes, or until the clams are cooked through and the potatoes are tender.
  5. Remove the dish from the oven and let cool for a few minutes before serving.

Tips

  • To make sure the clams are cooked through, use a sharp knife to pry open one of the shells. If the clam meat is opaque and white, it is cooked. If the clam meat is still translucent, cook the clams for a few minutes longer.
